Creamy Garlic Mushrooms on Chia or Flax Toast

Creamy Garlic Mushrooms on Chia or Flax Toast

Cosy, creamy and ready in minutes, this garlic mushroom toast is the perfect autumn breakfast, brunch or lunch. Served on toasted Dillon Organic Chia or Flax bread, it’s hearty, savoury and full of flavour.

Ingredients

  • 2 slices Dillon Organic Chia or Flax bread
  • 150g mushrooms, sliced
  • 1 garlic clove, finely chopped
  • 1 tsp olive oil
  • 1 tbsp cream cheese, crème fraîche or dairy-free alternative
  • 1 tsp lemon juice
  • Small handful fresh parsley, chopped
  • Pinch of sea salt
  • Black pepper, to taste

Optional: chilli flakes, thyme or a sprinkle of nutritional yeast

Method

Toast the Dillon Organic bread until golden and crisp.

You want the toast to be sturdy enough to hold the creamy mushrooms without going soggy, so let it get nicely crunchy around the edges.

Heat the olive oil in a pan over a medium heat.

Add the sliced mushrooms and cook for 5 to 6 minutes, stirring occasionally, until softened and golden.

Add the garlic and cook for another minute, until fragrant.

Stir it through the mushrooms and cook for another minute, just until fragrant. Try not to let the garlic brown too much, as it can become bitter.

Stir through the cream cheese or crème fraîche.

Add the lemon juice, sea salt and black pepper, then mix everything together until the mushrooms are coated in a smooth, creamy sauce.

Spoon the creamy garlic mushrooms over the toast.

Make sure to get all of the sauce from the pan too, as that’s where lots of the flavour is.

Finish with chopped parsley and any extra toppings you fancy.

Serve straight away while the toast is warm and the mushrooms are creamy.

Tip

For extra flavour, add a little thyme while the mushrooms cook, or finish with chilli flakes for a gentle kick.

FAQs

Can I make this ahead of time?
Not really. This is best assembled and eaten straight away so the Chia & Flax toast stays crisp. If you want to prep ahead, you can slice the mushrooms and chop the garlic in advance, then cook everything fresh when you’re ready to eat.

Which mushrooms work best?
Chestnut mushrooms are a great option because they have a deeper, savoury flavour, but button mushrooms, closed cup mushrooms or a mixed mushroom pack will all work well.

Can I make this dairy-free?
Yes. Simply swap the cream cheese or crème fraîche for a dairy-free alternative. You could also use a spoonful of dairy-free yoghurt or a splash of oat cream for a lighter version.

Is this suitable for a gluten-free diet?
Yes, as long as all ingredients used are certified gluten-free. Dillon Organic Chia & Flax bread is gluten-free, but always double-check any toppings, spreads or dairy-free alternatives.
