Frequently Asked Questions
Everything you need to know about Dillon Organic breads, ingredients, nutrition, storage and delivery.
Nutrition & Ingredients
Are your breads organic?
Yes. All Dillon Organic breads are certified organic by OF&G and made using carefully selected organic ingredients.
Are your breads suitable for keto diets?
Yes. Our breads contain around 3g carbohydrates per 25g serving, making them suitable for low carb and ketogenic lifestyles. We recommend 1-2 thin slices a day which is around 25-50g of Dillon Organic bread. This would equal around 3-6g of carbs in total, well within the carb limits of a keto diet.
How many carbs or net carbs are there per 100g?
We have around 12g carbs/net carbs per 100g depending on the bread variety - “net carbs” relate to U.S.A product labelling where fibre is subtracted from total carbohydrate count.
However, in the UK and EU, the nutrition labels just use Carbohydrate and Fibre separately so “net carbs” is equivalent to “Carbohydrate” on our label.
If you are consuming a product with sweeteners such as Xylitol, some UK/EU labels will also have “polyols” on the labels listed separately but under the category of Carbohydrates. So you’d need to subtract the total “Polyols” from the total carbohydrates section to reach “net carbs.” This is because Polyols are not absorbed by the body like sugars so are less important on a keto diet.
However, we do not use sweeteners (polyols) in our products so the only relevant count for you is the Carbohydrate per 25g portion/per 100g (3g/12g).
How many carbs are there per serving?
We believe strongly in plant based healthy fats which are important in maintaining a healthy diet. The Flax and Sunflower seeds in Dillon Organic bread provide fantastic sources of omega 3 and omega 6 fats. Studies show that eating foods rich in unsaturated fats improve blood cholesterol levels, which can decrease the risk of a heart attack and stroke.
Omega-3 fatty acids in particular boost heart health by improving cholesterol levels, reduce blood clotting, reduce irregular heartbeats and lower blood pressure. They are also highly important in brain function.
Your bread has a lot of fat, isn’t that unhealthy?
Around 3g carbs per 25g serving for each bread flavour.
Are your breads gluten free?
Yes. Our products are made in a gluten-free facility and independently tested at under 5ppm gluten.
Are your breads gluten-free?
Yes!
Is there any yeast in the bread?
No we do not use yeast. Instead, we use bicarbonate of soda to help rise the bread in the oven.
You put Sunflower oil in your bread - is that unhealthy?
We use Organic, cold pressed high Oleic (omega 9) sunflower oil in the products which are then heated to 180 degrees Celsius in baking. High Oleic (omega 9) oils like Olive oil are considered healthier than their omega 6 counterparts (most sunflower oils).
According to Dr Axe, a prominent nutrition thought leader, these high oleic oils are healthier for your heart and overall health. Our organic sunflower oil is 82% high oleic (omega 9) which enables it to keep it's structural integrity at higher temperatures of up to 235 degrees Celsius. Standard industrial sunflower oil, consisting mainly of high linoleic (omega 6) has a lower smoke point.
What is the difference between sunflower oil contained in seeds v standard industrial sunflower oil?
Most (not ours) industrial seed oils are high in omega-6. Sunflower seeds in our bread naturally contain omega-6 fatty acids, as do poultry, avocados and nuts. Omega 6 oils from whole foods are not a problem if they are consumed as part of a balanced diet also containing abundant omega-3 fatty acids from foods such as flaxseed, chia seeds and seafood.
Whole-food sources of omega-6 fatty acids include nutrients that protect omega-6 from oxidising. Seeds are also not exposed to the industrial treatments, chemicals and extreme heat that make standard industrial seed oils so toxic and damaged.
Do your Keto breads or Sliced Gluten free breads reduce calories after I put them in the freezer, defrost and subsequently toast?
That’s a very interesting question and one we have not tested. Our assumption is that freezing the bread will turn the small levels of starch present into resistant starch. This might reduce the processed calorific intake marginally as the resistance starch will feed the gut bacteria in your microbiome as well as feeding you.
Toasting the bread will cause a chemical reaction in which some water is removed, making the bread slightly drier. We don’t think the calories will be any different though from the toasting. However, some studies have shown the Glycaemic Index to reduce after toasting which is helpful for diabetics and those looking to stabilise blood sugar levels.
Do you add sugar or sweeteners?
No.
Are your breads ultra-processed foods (UPF)?
No. We never use emulsifiers, thickeners, gums or industrial fillers. Our breads are made using simple wholefood ingredients such as flaxseed, sunflower seeds and psyllium husk.
Do you use preservatives or additives?
No. Our recipes are intentionally clean-label with no preservatives, gums, gluten or artificial additives.
Is the bread high in fibre?
Yes! Our bread contains around 3 grams of fibre per 25g serving and 13g per 100g depending on the variety. A “high fibre” claim is when foods contain at least 6g fibre per 100g. The source of fibre in our breads is from the flax, psyllium Husk and sunflower seeds we use.
Is your Keto bread Paleo?
Yes! We do not use any grains, legumes or dairy in the bread.
What is Psyllium husk and why is it in the bread?
Psyllium husk is a shrub like herb called Plantago psyllium and the husk is the outer coating of the seed. It’s high in fibre, making it great for gut health and keeping you regular. In the bread, it’s used to help bind other ingredients together naturally.
Is your bread high in protein?
We have around 9g protein per 100g depending on the bread. This is around 13% of the energy value of the bread providing protein and therefore not deemed “high protein” However, it is a “source of protein.”
The bread is high in calories-isn’t that going to put on weight?
Our bread is nutrient dense and unashamedly high in calories. We do not subscribe to the out of date model of nutrition which states that high calories equals weight gain. By following a keto or low glycaemic load (GL) diet, one can eat high calorie food and actually lose weight (within reason).
What’s more important from our perspective is reducing refined carbohydrates, sugar and foods that combine high fat & sugar together. These foods in excess will lead to weight gain and increased body fat, not to mention poor general health!
Does your bicarbonate of soda (baking soda) contain aluminium?
Baking soda, is sodium bicarbonate, and it does not contain any acidifying agent–aluminium-based or otherwise. No Baking soda therefore contains aluminium as it’s 100% sodium bicarbonate with a chemical structure of CHNaO3. Our supplier of baking soda uses a process to keep it as pure as possible and this is called solution mining.
Hot water is funnelled underground to dissolve minerals such as nahcolite, which is where baking soda comes from. These are then dissolved into the water, which is then pumped back to the surface. Once at the surface, this enriched water goes through a process where the sodium bicarbonate and sodium carbonate are extracted. The water is crystalized, spun dry, and then screened, and the result is pure baking soda.
Baking soda which goes through commercial processing involves purified water dissolving sodium carbonate, with carbon dioxide then jetted through the water. The sodium carbonate then bonds with carbon dioxide resulting in sodium bicarbonate. This mixture is then placed in a centrifuge where the water is removed. Even though this commercial process is done in a factory, there little difference between the two processes in the method of mining natural or pure commercialised baking soda.
There are no added impurities or chemicals in either commercialised baking soda or naturally mined baking soda. “Baking powder” on the other hand can sometimes use aluminium based acids such as sodium aluminium phosphate to help the baked goods rise. You need to check with manufacturers of “baking powder” first to see if these are used but thankfully Dillon Organic does not use baking powder.
You use tapioca flour in your keto breads. Are they still keto?
We use a very small amount of tapioca flour in our recipe to help with texture and structure. While tapioca is technically a starch, in very small quantities, it can be compatible with a keto or low-carb lifestyle, especially when the net carbs per serving remain within ketogenic guidelines.
Our bread contains only 3g net carbs per 25g portion (thin slice) which is what allows us to market it as keto. For woman, 30g of carbs per day is allowable on a keto diet whereas for men it’s up to 50g carbs per day so one can eat a few slices a day of our bread and still remain keto.
That said, we fully respect that different people follow keto diets in different ways. Some are more strict and avoid any starches at all, while others are more flexible as long as net carbs are kept low enough to keep them in ketosis. We’ve also had many of our customers report back to us how our bread has helped them remain in ketosis and keep their blood sugars well balanced.
Why Dillon Organic Is Different
Unlike many gluten free and low carb breads, we avoid emulsifiers, gums and industrial fillers — creating breads that support satiety, balanced energy and better metabolic health.
Storage & Serving
What is the shelf life?
Our breads typically have a shelf life of around 6 months depending on production date.
How should I store the bread?
Store in a cool dark place. Once opened, refrigerate and consume within 3 days.
Can I freeze the bread?
Yes. We recommend slicing before freezing so you can toast slices directly from frozen.
What’s the best way to eat it?
We recommend slicing thinly and toasting — even double toasting for extra crunch.
Why is it so expensive?
The reason the bread is expensive is because it is made from the highest quality organic ingredients. Organic sunflower seeds and organic flaxseeds are very expensive to purchase and have increased considerably since the war in Ukraine. These two seeds make up most of the recipe. Unlike most low carb breads, we don’t use cheap fillers. However, the bread is incredibly nutritious and you only need a small amount - a thin 25g slice to curb your hunger. You can slice around 8-10 thin slices in 1 x 250g pack.
