Ingredients (serves 2)

For the greens

  • A handful of rocket or spinach
  • ½ cucumber, sliced
  • 1 tbsp olive oil
  • Juice of ½ lemon

How to make flax-crumbed chicken

1. Make the crumbs

Tear the flax bread and blitz into coarse crumbs. You want texture, not dust.

2. Prep the chicken

Flatten slightly for even cooking. Season well.

3. Coat properly

Dip into flour, then egg, then coat fully in the flax crumbs. Press them in so they stick.

4. Cook until crisp

Pan fry in olive oil over medium heat for 4–5 minutes each side until golden and cooked through.

5. Build the plate

Toss the greens with olive oil and lemon. Serve alongside the crispy chicken.
