Beetroot Bread with Whipped Feta, Roasted Grapes and Thyme

Beetroot Bread with Whipped Feta, Roasted Grapes and Thyme

Colourful, creamy and a little bit fancy without being difficult, this Beetroot & Flax open toast is perfect for a seasonal breakfast, brunch or lunch. The sweetness of the roasted grapes works beautifully with salty whipped feta, fragrant thyme and earthy beetroot bread.

Ingredients

  • 2 slices Dillon Organic Beetroot & Flax bread
  • 100g feta
  • 1 tbsp Greek yoghurt, cream cheese or dairy-free alternative
  • 100g red or black grapes
  • 1 tsp olive oil, plus extra to serve
  • 1 tsp honey or Dillon Organic chicory syrup
  • A few sprigs of fresh thyme
  • Black pepper, to taste
  • Pinch of sea salt

Optional: lemon zest, chilli flakes or chopped walnuts

Method

Preheat your oven or air fryer to 180°C.

Add the grapes to a small baking dish or lined tray, then drizzle with olive oil and honey or Dillon Organic chicory syrup. Scatter over a few thyme leaves and a small pinch of sea salt.

Roast the grapes for 8 to 10 minutes, or until they soften.

Blister slightly and release some of their juices. They should look glossy and jammy, but still hold their shape.

While the grapes are roasting, make the whipped feta.

Add the feta and Greek yoghurt, cream cheese or dairy-free alternative to a small blender or bowl, then blend or mash until smooth and creamy. Add a little black pepper and lemon zest if using.

Toast the Dillon Organic Beetroot & Flax bread until lightly crisp around the edges.

The toast should be firm enough to hold the whipped feta and warm grapes without becoming too soft.

Spread a generous layer of whipped feta over each slice of toast.

Don’t worry about making it too neat - a soft, swirled layer works best for catching the roasted grape juices.

Spoon the roasted grapes over the whipped feta, including a little of the warm juice from the tray.

Finish with extra thyme, black pepper and a small drizzle of olive oil.

Serve straight away while the toast is crisp, the feta is creamy and the grapes are still warm.

Tip

For extra crunch, finish with chopped walnuts or toasted seeds. For a sweeter version, add another small drizzle of Dillon Organic chicory syrup before serving.

FAQs

Can I make this ahead of time?
It’s best assembled and eaten straight away so the Beetroot & Flax toast stays crisp. You can roast the grapes and make the whipped feta ahead of time, then toast and assemble just before serving.

Which grapes work best?
Red or black seedless grapes work best because they become sweet, juicy and slightly jammy when roasted. Green grapes can work too, but they’ll give a sharper flavour.

Can I make this dairy-free?
Yes. Use a dairy-free feta-style alternative and dairy-free yoghurt or cream cheese to create a similar whipped topping.

Is this suitable for a gluten-free diet?
Yes, as long as all ingredients used are certified gluten-free. Dillon Organic Beetroot & Flax bread is gluten-free, but always check toppings and dairy-free alternatives.
